Green Rice
I LOVE RICE. I could eat rice truly every day. But do you know what I love more? A bowl of well-flavored rice like my Jalapeño-Cilantro green rice! A meal prep staple over here that pairs with nearly everything has a bit of heat, extra flavor, and added nutrition!
Ingredients
- 1 1/2 cups dry organic basmati rice
- 1 1 jalapeño rib + seeds removed
- 2 scallions
- 1 clove garlic
- 1 handful cilantro (use your heart on this one)
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Cook the rice from the package directions. While that’s cooking whip up the green sauce in a food processor.
- Add all the ingredients, and blend on high for a minute. Fold into the warm rice and serve!
- Best used in any way: by itself, in a burrito, in a bowl, as a side, or by itself. Also, keeps for a shockingly long time in the fridge! GREAT for meal prep! ?
