Rainbow Slaw

Rainbow Slaw

I love an excellent lite SUMMER SLAW ? Especially when it’s the colors of a rainbow ? Great for tacos, as a side, as a salad main with protein, for a potluck, or a BBQ!

Ingredients

  • 3 cups napa cabbage sliced thin (or green cabbage)
  • 1 cup red cabbage sliced thin
  • 1 red pepper sliced thin
  • 2 carrots sliced thin
  • 4 scallions
  • 1/2 cup slivered almonds
  • 1/2 cup cilantro roughly chopped

Dressing

  • 1/2 cup rice vinegar
  • 1/3 cup avocado oil
  • 2 tbsp toasted sesame oil
  • 1/3 tsp chili flakes (more if you like it ?)
  • 1 tsp salt (again more if you like things salty)
  • 1 tbsp honey

Instructions

  • You know the drill—Mandolin all of the veggies except the almonds and cilantro. Toss together. 
  • Whisk all the dressing ingredients and pour over the slaw. Toss. Add the cilantro and almonds and give it another toss and you are done!
  • This salad is like a fine wine and gets better with age so make it in the morning and serve it at night!
