Simple Summer Saute

Simple Summer Sauté

Making delicious food does not need to be complicated. Summer vegetables are so sweet, delicious, and full of flavor so we don't need to overcomplicate things! Save that for your work! 😛

Ingredients

  • 1 tbsp olive oil
  • 1/2 small red onion
  • 1-2 cloves garlic
  • 2 zucchinis cut into half-moons
  • 1 bunch asparagus
  • 1-2 cups fresh snap peas both ends removed
  • small bunch fresh basil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Start by prepping all your ingredients. Dice the onion and garlic cut the zucchini in half lengthwise then into little 1/4 inch half-moons. Snap the ends off the asparagus and cut into 1-inch long pieces and trim the ends off the snap peas (I like to cut some in half lengthwise to be fancy).
  • Add the olive oil to a non-stick pan and soften the opinion and garlic for about 3-5 minutes.
  • Add all the veg into the pan tossing around often. Add the salt + pepper! You will want to cook until everything is super bright green and softened, and a little el dente!
  • Top with some torn fresh basil and that's it! The perfect summer side served hot, warm ar cold!
