Spinach Pesto
CLEANED UP PESTO ? I love cheese etc., but for a healthier, lower-calorie, more nutritious option, do this:
Ingredients
- 2 cloves garlic
- 1 cup basil leaves
- 1 cup baby spinach
- 1/4 cup filtered water
- 1/4 cup olive oil
- 1/2 tsp salt + pepper
- 1/2 lemon juice
Instructions
- Blend on high and keep in the fridge for up to a few weeks!
Notes
1. Omit the pine nuts and use them for garnish
2. Omit the cheese and also use it to garnish
3. Instead of using all olive oil, do half water – you need the liquid for the proper consistency, not flavor. A little goes a long way.
4. Why not add neutral-tasting spinach and up the iron, vitamins & magnesium.
