Ombre Citrus Salad
You can use any citrus for this, but the mix of navel orange, blood orange, and grapefruit keeps every bite exciting. Sprinkled with thinly sliced fennel, pistachios, and fresh dill, + my EVERYDAY DRESSING — this salad will cut the heavy feeling from the holidays.
Ingredients
- 2 heads butter of Boston lettuce
- 1 bulb fennel sliced thin on a mandolin
- 1 blood orange peeled and sliced into rounds
- 1 navel orange peeled and sliced into rounds
- 1 grapefruit peeled and sliced into rounds
- 1/4 cup pistachios
- 1/4 bunch fresh dill
- 1/4 cup everyday dressing
Instructions
- Prep the fennel sliced thin on a mandolin. Slice the peel off the orange and cut it into rounds. And if you need to make the dressing do that also!
- Then in a vessel of your choice (I chose a beautiful white, shallow, bowl) start arranging the elements of the salad.
- Layer the lettuce and fennel and arrange the citrus fruits. Sprinkle with the pistachios, dill, and a drizzle of the dressing, and serve!
