Dijon Thym Pork Tenderloin

Dijon Pork Tenderloin

So delicious it can’t be healthy, Pork Tenderloin with a 5-ingredient dijon glaze. This kind of protein is the perfect segue into going from heavy holiday meals to clean new year's eating. All the flavor without compromise is my M.O. 

Ingredients

  • 1 organic pasture-raised pork tenderloin (you could also do chicken or cauliflower steaks
  • 1/3 cup dijon (I used Edmond Fallot Green Peppercorn)
  • 1/4 cup olive oil
  • 1 tbsp fresh garlic finely minced
  • 2 tbsp fresh thyme finely chopped
  • 1/2 tsp salt & pepper 

Instructions

  • Combine dijon, olive oil, garlic, thyme, and salt + pepper in a bowl. 
  • Preheat the oven to 375. 
  • In a pan add a drizzle of olive oil, season the tenderloin with salt and pepper, and seer it over medium-high heat on all sides until brown and crispy – should take about 10 minutes. 
  • Line a baking sheet with foil and place a cooling rack. Place the tenderloin on the rack and spoon over half the glaze. 
  • Cook for 15 minutes. Remove from the oven and spoon on the rest of the glaze. Cook for an additional 10-15 minutes until the tenderloin reaches an internal temperature of 145 degrees. 
  • Serve with roasted potatoes and some wilted cabbage (coming up next). YUMMMMMMMMM.
