Roasted Rainbow Veg
ROASTED RAINBOW VEGETABLES 🌈 Quick, packed with color, nutrition, flavors, vitamins & minerals!
Ingredients
- 3-4 beets quartered
- 6 radishes Cut in half
- 2 leeks cut into 1-inch
- 8 Brussels sprouts quartered or halved deep
- 2 parsnips Cut into 2-inch sticks
- 1 sweet potato Cut into 2-inch sticks
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp oregano
Instructions
- Coat with olive oil, dried oregano, salt and pepper. Toss to coat and bake at 400 for 35 minutes (give or take, depending on your oven).
- Top with some grilled chicken and a dollop of hummus, and this is my ideal weeknight dinner!
