Roasted Rainbow Veg

ROASTED RAINBOW VEGETABLES 🌈 Quick, packed with color, nutrition, flavors, vitamins & minerals!

Ingredients

  • 3-4 beets quartered
  • 6 radishes Cut in half
  • 2 leeks cut into 1-inch
  • 8 Brussels sprouts quartered or halved deep
  • 2 parsnips Cut into 2-inch sticks
  • 1 sweet potato Cut into 2-inch sticks
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp oregano

Instructions

  • Coat with olive oil, dried oregano, salt and pepper. Toss to coat and bake at 400 for 35 minutes (give or take, depending on your oven). 
  • Top with some grilled chicken and a dollop of hummus, and this is my ideal weeknight dinner!
