Caramelized Onion Dip

I’ve had several phone calls today asking for last-minute appetizer ideas. And my advice is to give the people what they want CARAMELIZED ONION DIP ? but make it a notch up from the store-bought with a few more nutrients ya know?

Ingredients

  • 3 white or yellow onions sliced
  • 2 tbsp butter (maybe more)
  • 1 tbsp salt
  • 1 tsp pepper
  • 3 tsp coconut sugar
  • 1/2 tsp soy sauce 
  • 1/4 cup veganaise (or mayo)
  • 1/4 cup Greek yogurt  (or sour cream)
  • 1 container cream cheese room temperature (I use Kite Hill Almond Cream Cheese)

Instructions

  • Slice the onions and in a pot/pan/whatever melt the butter on medium-low. 
  • Add the onions and start the process. After about 10 minutes when they start getting soft add the salt, pepper, and sugar. 
  • Continue cooking and tossing them around every few minutes. This process will go on for a good 44 minutes. Low and slow. 
  • Once they are browned and caramelized with a few crusty bits put them in a bowl and chill them in the fridge for 15-20 mins. 
  • Stir the soy sauce into the onions and incorporate well.
  • hen add the veganaise, Greek yogurt, and cream cheese one at a time to combine. 
  • The dip should be smooth, creamy, and just thick enough. Devour with some good (or bad…bad meaning ruffles) potato chips and thank me later. 

Notes

If you want to make it a little less thick, add some milk of your choice 1 tbsp at a time.
