Shrimp Summer Salad

SUMMER SALADS ARE THE BEST SALADS ? especially this Shrimp, Corn, and Asparagus Salad I whipped up for @michellefaist and me today.

Ingredients

  • 2 heads Romaine 
  • 10 spears Roasted Asparagus
  • 1 cup Grape tomatoes halved
  • 2 Persian cukes
  • 2 pkgs @traderjoes Argentinian Red Shrimp
  • 2 ears Roasted corn
  • 3 Scallions
  • 1/4 cup Feta
  • 1 Avocado cubed
  • everyday dressing

Instructions

  • Roast the corn and asparagus in the oven at 400 degrees for 15 minutes.
  • In a saucepan, prepare the shrimp as per package instructions!
  • While that's all cooking, start assembling the salad. Chop the romaine and add that to a beautiful serving bowl, add the tomatoes, scallions, and cucs.
  • The veggies should be done by now. Slice the corn off the cob trying to keep big chunks, cut the asparagus into 1-inch pieces and add to the salad along with the feta.
  • Dress in my everyday dressing! And VOILA!!!!!!
