Shrimp Summer Salad
SUMMER SALADS ARE THE BEST SALADS ? especially this Shrimp, Corn, and Asparagus Salad I whipped up for @michellefaist and me today.
Ingredients
- 2 heads Romaine
- 10 spears Roasted Asparagus
- 1 cup Grape tomatoes halved
- 2 Persian cukes
- 2 pkgs @traderjoes Argentinian Red Shrimp
- 2 ears Roasted corn
- 3 Scallions
- 1/4 cup Feta
- 1 Avocado cubed
- everyday dressing
Instructions
- Roast the corn and asparagus in the oven at 400 degrees for 15 minutes.
- In a saucepan, prepare the shrimp as per package instructions!
- While that's all cooking, start assembling the salad. Chop the romaine and add that to a beautiful serving bowl, add the tomatoes, scallions, and cucs.
- The veggies should be done by now. Slice the corn off the cob trying to keep big chunks, cut the asparagus into 1-inch pieces and add to the salad along with the feta.
- Dress in my everyday dressing! And VOILA!!!!!!
