Pickled Red Onions
These are a staple in my fridge. I make a big batch almost every week, and they are gone! The perfect garnish for almost EVERY dish.
Ingredients
- 1 red onion
- 1/2 the jar of apple cider vinegar
- 1/2 the jar of filtered water
- 1 tsp salt
- (bay, dill, peppercorns optional)
Instructions
- Slice the onion in half, then into super thin moons. I sometimes use a mandolin to get them super thin!
- Add the sliced onions to a 32oz mason jar.
- Fill it halfway with the apple cider vinegar and the rest of the way with the filtered water. Add the salt or other flavors.
- Give it a shake and leave it in the fridge for at least 4 hours. The longer they sit, the better!
Notes
They can last in the fridge for up to 3 weeks…if they even make it that long!
