Pickled Red Onions

These are a staple in my fridge. I make a big batch almost every week, and they are gone! The perfect garnish for almost EVERY dish.

Ingredients
  

  • 1 red onion
  • 1/2 the jar of apple cider vinegar
  • 1/2 the jar of filtered water
  • 1 tsp salt
  • (bay, dill, peppercorns optional)

Method
 

  1. Slice the onion in half, then into super thin moons. I sometimes use a mandolin to get them super thin!
  2. Add the sliced onions to a 32oz mason jar.
  3. Fill it halfway with the apple cider vinegar and the rest of the way with the filtered water. Add the salt or other flavors.
  4. Give it a shake and leave it in the fridge for at least 4 hours. The longer they sit, the better!

Notes

They can last in the fridge for up to 3 weeks...if they even make it that long!
