Mom. I recreated your trailer park meatballs, aka. Meatballs smothered in cream of mushroom soup. I made them healthier, gourmet, and delicious; you will be proud.
It’s a mouthful to say, but a pretty delicious one! (Do I even need to add that it’s good for you, or can we skip that part now?) I used my Quinoa Flax Chicken Meatball recipe + my protein ranch recipe + my pickled red onions, which can all be found on my website!
If you’re not very good in the kitch… this Chicken Adobo recipe is essentially fool proof but also entirely impressive. My friend @jennbrowntv makes it for me every time she’s in town and I adopted it and added some little touches of my own! It’s also perfect for week night meal planning cause it gets better the next day.

There was a French deli in Vancouver that was/is FAMOUS! Especially for their sandwiches and deli salads. One of those being the pasta salad. It was so simple, and so delicious and every bite with a caper in it was delicious! I cleaned it up and added a twist of my own.
