This were an accidental success — like most of my recipes. I needed to clear out some veg, had some chicken thighs defrosted, and always have yummy herbs and pickled onions on hand. These can be served as lettuce cups, or as a bowl and are GREAT for meal prep

The only instruction is to roast your favorite veggies + black beans in my blackening spice mix (recipe on my website) — the black beans get yummy and crispy, and with warm rice and crisp fresh veggies, this bowl is a winner. Oh, and I use the primal kitchen buffalo sauce + my everyday dressing. DIG IN.

I’m just going to leave this ridiculously nourishing and delicious veg curry right here… this “curry” is made from scratch, so the paste and flavor is a little prep time consuming but oh so worth it. You will make it again and again.

We called this in my family but there was absolutely nothing classy about it. So I gave it a HEALTHY makeover and now the Betty Crocker version can get back to the 80s and stay there and I can have my classier chicken almost guilt-free. (May sound gross but I’m telling you it’s ?)
