Buffalo Chicken Meatball Salad

It’s a mouthful to say, but a pretty delicious one! (Do I even need to add that it’s good for you, or can we skip that part now?) I used my Quinoa Flax Chicken Meatball recipe + my protein ranch recipe + my pickled red onions, which can all be found on my website!


  • 6-8 quinoa flax chicken meatballs recipe below
  • 2-3 cups shredded romaine
  • 3 stalks celery
  • 1 avocado
  • 2 tbsp protein ranch recipe below
  • pickled red onions recipe below
  • garnish of cilantro


  • I always have a batch of my quinoa flax chicken meatballs in the fridge for an on-the-go protein source or quick main. But if you don't start by making a batch of those.
  • Then make the protein ranch.
  • Then make the pickled onions.
  • Now prep the romaine, slice the celery as you wish, and assemble the salad. Garnish with pickled red onions and cilantro!
  • Enjoy the BUFFALO with out the guilt!
