Kroma Quinoa Salad
The KROMA meal prep salad ? This is my go-to nutrient-dense salad while I’m on the @kromawellness reset, but it has become a weekday staple (I make a big batch on Sunday).
Ingredients
- 3 cups cooked quinoa cooked it in broth for added nutrition
- 2 cups roasted cauliflower
- 2 cups roasted fennel
- 3 cups spinach
- 1 lemon juice of
- 1/3 cup olive oil
- fresh basil, cilantro or mint or all
- salt & pepper
Instructions
- Add all the above to a big bowl and combine. That's it. Add more cooked vegetables that you have on hand, also.
- I like to mix in cooked chicken.
Notes
It keeps for up to 5 days and stays beautiful and delicious. Top it with some fish or chicken for an added boost of protein ?
