Beef & Mushroom Lettuce Cups
Super simple, packed with bursts of flavor. The mushrooms keep it nice and moist without adding tons of sauces and fillers!What makes these lettuce cups, is ALL THE FIXINGS IN THE WORLD!!!!!
Ingredients
Beef & Mushroom Filling
- 2 portobello mushrooms diced
- 1 lb organic ground beef
- 1 pkg enokitake mushrooms
- 2 tbsp minced fresh ginger
- 2 tbsp minced garlic
- 3 tbsp tamari or soy
- 2 tbsp hoisin (optional)
- 1 tbsp toasted sesame oil
Mango Salsa
- 2 yellow mangoes
- 1/4 cup fresh cilantro
- 1/2 tsp pepper
- 1/2 tsp salt
- 2 limes juice of
Instructions
Beef & Mushroom Filling
- Prep all your ingredients and get them ready to go. Mise en place!
- Over medium heat, add a couple of tbsp of olive oil. Add the mushrooms and beef. Break up the meat with a wooden spatula – brown for about 5 minutes.
- Add the ginger + garlic and enokitake mushrooms.
- Add the soy sauce and optional hoisin
- Brown for 10 minutes until it’s all cooked through.
Mango Salsa
- MANGO SALSA ? Super simple, v easy – but I use it as a garnish in these SUPER amazing lettuce cups, and I wanted to break down each component.
- Peel and dice the mangoes. Finely chop the cilantro. Add salt, pepper, and lime juice! Mix together and voila ?
