Simple Kale Salad

Simple Kale Salad with Lemon Garlic Dressing

Kale sort of sucks – if it isn’t done right it’ll make you bloated + ? for real, at least for me. This version is so simple, great for meal prep, good for large crowds, and goes with basically any protein. 


  • 2 cloves garlic
  • 1 lemon Zest + juice
  • 3/4 cup olive oil
  • 1/2 tsp Salt + pepper
  • 3 bunches Lecanto kale (trust me, after massaging it down it’s like spinach – goes from a lot to a little)
  • pecorino or parm to garnish (optional)


  • Combine all the ingredients (minus the kale) in a blender or food processor – dressing is done. 
  • Prep your kale: Wash and dry it. Remove the stems. Roll it up and slice it thin
  • Add a little salt and massage it down for about 40-60 seconds. Pour over the dressing and devour. 
  • You can also top with parm, pecorino, or nutritional yeast! ?
