Rice Cake Tuna Melt

I just want start by saying: Tuna lovers, I understand. I know the feeling of publicly ordering or consuming a delicious tuna sandwich or melt and feeling shame. The judgey looks, the comments, the need for approval when you exclaim "mmmm delicious" and you receive crickets in return. Im here to tell you I'm with YOU! And its time we show the world that we don't care if WE LOVE TUNAAAAAAAAAA! 
So with that, This is my favorite lunch on the planet to make and is so damn delicious I had to tell the world about it and share my recipe! (tuna companies, DM me re: sponsorship, I'm your girl)

Ingredients

  • 1 Can flake white tuna in water
  • 2 tbsp veganaise  or more
  • 1 tsp dijon mustard
  • 1 tsp chopped fresh dill
  • 1 scallion 
  • 1 jalapeño seeds and ribs removed and diced
  • 1 tsp capers
  • 1 stalk celery hearts preferred and diced + leaves
  • Fresh pepper
  • 2 rice cakes
  • 2 pieces vegan American cheese
  • tomato Sliced

Instructions

  • Combine all of the ingredients in a bowl. Break down the tuna with a fork and mix well.
  • Top your rice cakes with the mixture. Add sliced tomatoes. Add a slice of cheese to each and stick it under the broiler for 5 minutes.
  • Yeah its fancy but get over it, its delicious and the tuna deserves to be treated like a gourmet treat.
