Fruit crisp
FRUIT (That’s about to go bad) CRISP ? ? ? ? Take any fruit you have – mine was either a little old or too ripe – which is PERFECT for this and saves wasting!!!
Ingredients
- 4 cups of any fruit you have mine was either a little old or too ripe – which is PERFECT for this and saves waste! (I used cherries, nectarines, apple, and some strawberries)
- 1.5 cups quick organic oats
- 1/4 cup melted ghee or coconut oil of a combination
- 1/3 cup walnuts
- 2 tbsp hemp hearts
Instructions
- Preheat the oven to 350 degrees. Spray a skillet, dish, or pan (whichever vessel you use) with a non-stick avocado or olive oil spray.
- Prepare all of the fruit: wash, peel, cut, etc. You can make it chunky or not; it is very forgiving – I sliced my nectarines and apples and put the cherries and strawberries in whole. Tap them into an even layer!
- In a food processor or Vitamix, pulse the oats, ghee, maple syrup, walnuts, and hemp hearts until well combined and almost chunky and thick – about 30 seconds- 1 minute.
- Top the fruit with the crisp mixture evenly using your fingers to break it up. Bake for 45 minutes until slightly bubbling up the sides and golden!If you like it a bit darker, keep it in for an extra 10. If you like it lighter, decrease the cooking time by 10. It is literally SO forgiving and pretty foolproof!
- Serve with your choice of vanilla bean ice cream or by itself – honestly, it's so healthy you could have this for breakfast!
Notes
Top with whipped cream and some fresh mint.
