Clean Pasta Salad
There was a French deli in Vancouver that was/is FAMOUS! Especially for their sandwiches and deli salads. One of those being the pasta salad. It was so simple, and so delicious and every bite with a caper in it was delicious! I cleaned it up and added a twist of my own.This is also VEGAN and gluten-free.
Ingredients
- 12 oz Jovial Food Gluten-Free Farfalle (1 whole box)
- 2 cups diced red and yellow peppers
- 1/3 cup sliced scallions
- 1/2 cup diced celery
- small handful dill (or parsley)
Dressing
- 3/4 cup veganaise
- 2 tbsp grainy mustard
- 1 tbsp olive oil
- 1/2 lemon juice
- 1/2 tsp pepper
- big pinch salt
- 2 tbsp capers
- 1 tsp brine
Instructions
- Bring a pot of salted water to a boil and cook the pasta to box instructions.
- In your serving bowl, add the veganaise, grainy mustard, olive oil, lemon juice, salt, pepper, capers & brine. Stir to combine.
- Add the peppers, scallions, and celery. Also, stir to combine.
- Drain the pasta and rinse with cold water. Add directly to the dish. Coat and toss the pasta in the dressing and veg. Chill it in the fridge for at least an hour – do not skip this step! They dressing will soak into the noodles and the flavors will marinade together!
- Bring it out of the fridge and give it a big toss! Garnish with the dill and devour!
