We called this in my family but there was absolutely nothing classy about it. So I gave it a HEALTHY makeover and now the Betty Crocker version can get back to the 80s and stay there and I can have my classier chicken almost guilt-free. (May sound gross but I’m telling you it’s ?)
Mom. I recreated your trailer park meatballs, aka. Meatballs smothered in cream of mushroom soup. I made them healthier, gourmet, and delicious; you will be proud.
It’s a mouthful to say, but a pretty delicious one! (Do I even need to add that it’s good for you, or can we skip that part now?) I used my Quinoa Flax Chicken Meatball recipe + my protein ranch recipe + my pickled red onions, which can all be found on my website!
If you’re not very good in the kitch… this Chicken Adobo recipe is essentially fool proof but also entirely impressive. I have never met someone who didn’t absolutely LOVE this salad. At first, you’re like meh, then your first bite and you’re a believer! On rotation for summer BBQs and goes great with BBQ chicken and some corn on the cob. DELISH!
