One of my favorite proteins to enjoy with some yummy veg, on a salad, or the go. Kids love them also! It’s a family hit! Make a double batch and freeze half of them for easy weeknight meals. They are seriously flavorful, juicy, and delish — you won’t know they are good for you!

I’m just going to leave this ridiculously nourishing and delicious veg curry right here… this “curry” is made from scratch, so the paste and flavor is a little prep time consuming but oh so worth it. You will make it again and again.
We called this in my family but there was absolutely nothing classy about it. So I gave it a HEALTHY makeover and now the Betty Crocker version can get back to the 80s and stay there and I can have my classier chicken almost guilt-free. (May sound gross but I’m telling you it’s ?)
Mom. I recreated your trailer park meatballs, aka. Meatballs smothered in cream of mushroom soup. I made them healthier, gourmet, and delicious; you will be proud.
It’s a mouthful to say, but a pretty delicious one! (Do I even need to add that it’s good for you, or can we skip that part now?) I used my Quinoa Flax Chicken Meatball recipe + my protein ranch recipe + my pickled red onions, which can all be found on my website!
If you’re not very good in the kitch… this Chicken Adobo recipe is essentially fool proof but also entirely impressive. My friend @jennbrowntv makes it for me every time she’s in town and I adopted it and added some little touches of my own! It’s also perfect for week night meal planning cause it gets better the next day.
I have zero idea how to cook delicious Asian food…but the different ingredients in these chicken burgers are inspired by my favorite Asian flavors: spice, sesame, and scallion – so you probs won’t find these in Singapore or Japan but you will in my kitchen!
I mean, if this isn’t HE most indulgent summer salad, then I don’t know what is! Sweet melon, salty prosciutto two ways, salty mozzarella, spicy arugula, fragrant basil, and a juicy salt & pepper chicken. Chef’s Kiss!
