Rainbow Slaw
I love an excellent lite SUMMER SLAW ? Especially when it’s the colors of a rainbow ? Great for tacos, as a side, as a salad main with protein, for a potluck, or a BBQ!
Ingredients
- 3 cups napa cabbage sliced thin (or green cabbage)
- 1 cup red cabbage sliced thin
- 1 red pepper sliced thin
- 2 carrots sliced thin
- 4 scallions
- 1/2 cup slivered almonds
- 1/2 cup cilantro roughly chopped
Dressing
- 1/2 cup rice vinegar
- 1/3 cup avocado oil
- 2 tbsp toasted sesame oil
- 1/3 tsp chili flakes (more if you like it ?)
- 1 tsp salt (again more if you like things salty)
- 1 tbsp honey
Instructions
- You know the drill—Mandolin all of the veggies except the almonds and cilantro. Toss together.
- Whisk all the dressing ingredients and pour over the slaw. Toss. Add the cilantro and almonds and give it another toss and you are done!
- This salad is like a fine wine and gets better with age so make it in the morning and serve it at night!
