Simple Kale Salad with Lemon Garlic Dressing
Kale sort of sucks – if it isn’t done right it’ll make you bloated + ? for real, at least for me. This version is so simple, great for meal prep, good for large crowds, and goes with basically any protein.
Ingredients
- 2 cloves garlic
- 1 lemon Zest + juice
- 3/4 cup olive oil
- 1/2 tsp Salt + pepper
- 3 bunches Lecanto kale (trust me, after massaging it down it’s like spinach – goes from a lot to a little)
- pecorino or parm to garnish (optional)
Instructions
- Combine all the ingredients (minus the kale) in a blender or food processor – dressing is done.
- Prep your kale: Wash and dry it. Remove the stems. Roll it up and slice it thin
- Add a little salt and massage it down for about 40-60 seconds. Pour over the dressing and devour.
- You can also top with parm, pecorino, or nutritional yeast! ?
