Coconut Rice Pudding
Who else always has some rice left over? No one? Cool! Then make a pot of rice and MAKE THIS. It is a healthy, guilt-free dessert that is warm and cozy.
Ingredients
- 3 cups cooked basmati rice or jasmine, or whatever
- 1 can coconut milk
- 1 can filtered water
- 1 full vanilla bean seeds removed
- 1/4 cup maple syrup
Instructions
- In a saucepan over medium-high heat, add the coconut milk, water, vanilla, and maple syrup.
- Bring it to a boil and let it do its thing for 5-minutes, constantly stirring so it doesn't stick.
- Bring it down to low, and let it thicken and bubble away, stirring constantly for around 30-minutes.
- That's it! Top with my strawberry glaze or your favorite fruit.
Notes
Sometimes I do 2 cans of lite coconut milk, other times I use one can of coconut cream, and another of water. Doesn’t really matter but I like it to be rich and creamy. You could even use almond milk if you wanted to.
