Kale sort of sucks – if it isn’t done right it’ll make you bloated + ? for real, at least for me. This version is so simple, great for meal prep, good for large crowds, and goes with basically any protein.

I told my friend the salad was so simple and she laughed and said “yes if you have speckled arugula, manchego cheese, and fancy olives”. She is correct. Everyone should have these things in their fridge at all times.
I love a good Caesar salad, I mean who doesn’t? I wouldn’t necessarily call a Caesar salad “a healthy option” BUT have no fear. This one is clean without compromising ANY flavor
Healthy but perfectly satiating. Great for a party or potluck. Super forgiving and allows for some creativity!
