CURRY TUNA LETTUCE CUPS

These are a lean, protein-packed machine of a lunch (or dinner)! They travel well and taste delicious! Make them ahead for some easy meal prep also!

Ingredients
  

  • 2 cans of Blue Harbor Fish Co. Wild Albacore Tuna, No Salt Added
  • 1/3 cup veganaise or mayo
  • 1/2 lemon juice of
  • 3 scallions
  • 2 stalks of celery
  • 3 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 tbsp dried unsweetened currants
  • 3 tbsp slivered almonds
  • 1 tbsp chopped fresh parsley
  • Radicchio boats or little gems

Method
 

  1. You know I love to prep, so start by getting all the ingredients together: slice the scallions thin, cut the celery into small pieces, chop the parsley and let's go!
  2. In a mixing bowl, add in 2 cans of Blue Harbor Fish Co. Wild Albacore Tuna, No Salt Added. Flake it gently to try to keep it in chunks!
  3. Then add all the ingredients in no particular order!
  4. Combine well, and using radicchio, little gems, or whatever lettuce vessel you can find, spoon in a healthy amount of the tuna mixture! 
  5. Serve right away and enjoy - these are crunchy, fresh, sweet, savory, creamy, and DELICIOUS!
