Take the chicken thighs and using a paper towel, dab off all excess moisture.
Line your air fryer tray, and lay them flat down. Season with salt + pepper
Cook at 350 degrees on one side for 10 minutes. I noticed with mine it left a ton of fat and moisture in the pan. Carefully remove the tray and drain away the moisture.
Flip the chicken thighs over, season again, and coat with the cashew buffalo sauce. Cook for another 15 minutes.
Bring them out, give them one last drizzle of buffalo sauce and finish for another 2 minutes in the air fryer.
Plate them with veggies and protein ranch, and curl up to your favorite game.
