Roasted Rainbow Veg
ROASTED RAINBOW VEGETABLES 🌈 Quick, packed with color, nutrition, flavors, vitamins & minerals!
- 3-4 beets quartered
- 6 radishes Cut in half
- 2 leeks cut into 1-inch
- 8 Brussels sprouts quartered or halved deep
- 2 parsnips Cut into 2-inch sticks
- 1 sweet potato Cut into 2-inch sticks
- 1/4 cup olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp oregano
Coat with olive oil, dried oregano, salt and pepper. Toss to coat and bake at 400 for 35 minutes (give or take, depending on your oven).Â
Top with some grilled chicken and a dollop of hummus, and this is my ideal weeknight dinner!
