Mashed Potato Waffles
When you have small kids, there always seems to be some mash in the fridge. These re-purpose those not-so-exciting day-old leftovers into savory, delicious, nutrient-packed waffles. You won't want to feed these to your kids. They're so good.
- 3 cups leftover mashed potatoes ideally room temp
- 2 eggs
- 1/2 cup FlourĀ
- 1/2 tsp baking powder
- 1/4 cup milk
- Olive oil to grease the waffle maker
- 1/4 cup Chives
- 1/4 cup Dill
Turn on the waffle maker and set it to medium - we want some color on them, so it should be hot. All waffle makers are different, but we use level 3.
The best way to cook is to get everything ready to go. If you don't have any mashed potatoes, now is the time to make them!
Add all the ingredients and combine well in a mixing bowl using a spatula or whisk. There is no need to add the wet and then the dry or vice versa - just mix them well.
We like adding olive oil straight to the waffle pan using a brush - spray is also fine! Add 1/3-1/2 cup of the mixture. Let the waffle maker do it and tell you when they are done!
Top with a mix of avocado and greek yogurt (or either or), some hemp hearts, chives, and whatever your child will love!
Remember to sneak one with a fried egg on top for yourself!
