Kroma Quinoa Salad

Ingredients
3
cups
cooked quinoa
cooked it in broth for added nutrition
2
cups
roasted cauliflower
2
cups
roasted fennel
3
cups
spinach
1
lemon
juice of
1/3
cup
olive oil
fresh basil, cilantro or mint or all
salt & pepper
Instructions
Add all the above to a big bowl and combine. That's it. Add more cooked vegetables that you have on hand, also.
I like to mix in cooked chicken.
Notes
It keeps for up to 5 days and stays beautiful and delicious. Top it with some fish or chicken for an added boost of protein ?
